How about a new Lazy Mom Recipe to put in your Lazy Mom cooking repertoire?

How about a new Lazy Mom DESSERT Recipe to put in your Lazy Mom cooking repertoire?

How about we all sit around over a pan of these and talk about how jiggly our thighs are and sing kumbaya together?

No?

Well okay, I thought maybe if I threw that one in there you'd all want to do that with me, but whatever.

Anyway, Lazy Mom Beth who has sent in past Lazy Mom Recipes for us to enjoy has done it again!  Her latest submission makes me want to kiss her and then smack her all at the same time.

A kiss for the easy dessert recipe.

A smack for the damage it will do to my thighs.

But I'm sure you all knew that already."

Lazy Cake Cookies:

1 box yellow or white cake mix
2 eggs beaten
5 T melted butter
2 C M&M's or mini chocolate chips

Mix together, put in a 9x13 pan and bake at 350 for 20 min!


After looking at that picture I just have two words for you....

Glory.

Hallelujah.

I think I'll be making these soon.  BUT only if the family is here to help me eat them or I may eat the whole thing by myself. And that would just be terrible for that jiggly thigh disease I have.

What? It's a real disease. It's just never been labeled till now.  As in right now this minute. 

I'm sure the medical community will be contacting me soon to learn more about this atrocious disease and how it affects millions every day.

I'm sure they will give me awards and accolades over it.

I'm sure they will make me the case study once they see these bad boys I sport around.

Aren't you so glad you read this blog?  I mean where else would you hear so much talk about jiggly thighs?

My friend made this cake & said it was Delish!!! Peanut Butter Pound Cake

A Cook's Quest: Peanut Butter Pound Cake:


Peanut Butter Pound Cake
Recipe Source: Modified slightly from Loving Life


Cake:

1 cup butter, softened
2 cups sugar
1 cup light brown sugar, packed
1/2 cup peanut butter
5 eggs
2 tablespoons vanilla (original recipe called for 1)
3 cups cake flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cups whipping cream or whole milk

Prepare a large tube pan or bundt pan and preheat the oven to 325 F.  Depending on the size of your pan you may have extra batter left over, use this for cupcakes.
In a large bowl or kitchen aide mixer cream together the butter and sugar until light and fluffy.  Add the brown sugar and peanut butter mixing until well combined.  Add the eggs one at a time, mixing well after each one.  Add in vanilla.
In another bowl whisk together the flour, baking powder, salt, and baking soda.  Add about 1/3 of the dry ingredients and then about 1/3 of the milk.  Continue adding the dry ingredients and the milk alternating until they are both added and well combined.
Fill the prepared pan about 3/4 full (remember you may have extra batter left over depending on the size of your pan).  Bake for 60-90 minutes or until a toothpick comes out clean.  
Cool cake for 10 minutes then turn out to finish cooling.  When completely cooled frost with frosting and top with chocolate drizzle or shavings.
Frosting/Glaze: 
1/2 cup butter, softened
1 cups peanut butter
2 cups powdered sugar
3 Tablespoons milk (more or less depending on how thick or thin you want it. I used close to 7 tablespoons to get the consistency I wanted.)

In a kitchen aide bowl or medium bowl with an electric mixer combine the butter and peanut butter until well mixed.  Add in the powdered sugar and milk until the desired consistency is reached.  
**I should have cut the original recipe in half because I ended up with a lot of glaze, but it was tasty and with some additional powdered sugar to thicken it up it tasted great on graham crackers!**
Chocolate Drizzle:
1/2 chocolate chips
1 teaspoon oil
Melt together over a double boiler over low heat until well combined.  Drizzle over frosted cake.

Wow I never thought of Corn Dog Muffins!!!!

Corn Dog Muffins Recipe

"Ingredients
2 packages (8-1/2 ounces each) corn bread/muffin mix
2 tablespoons brown sugar
2 eggs
1 cup milk
1 can (11 ounces) whole kernel corn, drained
5 hot dogs, chopped"

Directions

  • In a large bowl, combine corn bread mix and brown sugar. Combine eggs and milk; stir into dry ingredients until moistened. Stir in corn and hot dogs (batter will be thin).
  • Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 14-18 minutes or until a toothpick inserted in muffin. Serve warm. Refrigerate leftovers. Yield: 1-1/2 dozen.
Nutritional Facts1 serving (1 each) equals 130 calories, 6 g fat (2 g saturated fat), 35 mg cholesterol, 300 mg sodium, 14 g carbohydrate, trace fiber, 4 g protein.

I have to try this Corn Dogs Recipe

This is a great recipe I know I'm going to try this one. My son & I both love a great corn dog with mustard & ketchup

Corn Dogs Recipe | Taste of Home Recipes:
"Ingredients
3/4 cup yellow cornmeal
3/4 cup self-rising flour
1 egg, lightly beaten
2/3 cup milk
10 Popsicle sticks
10 hot dogs
Oil for deep-fat frying"

Directions

  • In a large bowl, combine cornmeal, flour and egg. Stir in milk to make a thick batter; let stand 4 minutes. Insert sticks into hot dogs; dip in batter.
  • In an electric skillet or deep-fat fryer, heat oil to (375°). Fry corn dogs, a few at a time, about 8-6 minutes or until golden brown, turning occasionally. Drain on paper towels. Yield: 10 servings.
Editor's Note: As a substitute for self-rising flour, place 1 teaspoon baking powder and 1/4 teaspoon salt in a measuring cup. Add all-purpose flour to measure 3/4 cup.

Chili Coney Dogs Recipe | Taste of Home Recipes:

 "Ingredients
1 pound lean ground beef (90% lean)
1 can (15 ounces) tomato sauce
1/2 cup water
2 tablespoons Worcestershire sauce
1 tablespoon dried minced onion
1/2 teaspoon garlic powder
1/2 teaspoon ground mustard
1/2 teaspoon chili powder
1/2 teaspoon pepper
Dash cayenne pepper
8 hot dogs
8 hot dog buns, split
Shredded cheddar cheese, relish and chopped onion, optional"

Directions

  • In a large skillet, cook beef over medium heat until meat is no longer pink; drain. Stir in the tomato sauce, water, Worcestershire sauce, onion and spices.
  • Place hot dogs in a 3-qt. slow cooker; top with beef mixture. Cover and cook on low for 4-5 hours or until heated through. Serve on buns with cheese, relish and onion if desired. Yield: 8 servings.

"Ingredients
1 package (8-1/2 ounces) corn bread/muffin mix
1 cup chopped green pepper
1/2 cup chopped onion
1/2 cup chopped celery
1 tablespoon olive oil
1 package (1 pound) hot dogs, halved lengthwise and cut into bite-size pieces
1 can (15 ounces) chili with beans
2 tablespoons brown sugar
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1 cup (4 ounces) shredded cheddar cheese, divided"

Directions

  • Prepare corn bread batter according to package directions. Spread half the batter into a greased 8-in. square baking dish; set aside.
  • In a large skillet, saute the green pepper, onion and celery in oil until crisp-tender. Stir in hot dogs; saute 3-4 minutes longer or until lightly browned. Stir in the chili, brown sugar, garlic powder and chili powder; heat through. Stir in 3/4 cup cheese.
  • Spoon over corn bread batter; top with remaining corn bread batter. Sprinkle remaining cheese over the top.
  • Bake, uncovered, at 350° for 28-32 minutes or until a toothpick inserted near the center comes out clean. Let stand for 5 minutes before serving. Yield: 6 servings.

Try Baked Donut Holes

2 cups all-purpose flour
3/4 cup white sugar
2 teaspoon baking powder
1/4 teaspoon ground cinnamon
1 teaspoon salt
2 eggs, lightly beaten
2 tablespoons butter, melted
3/4 cup buttermilk (a big splash of lemon juice + enough milk to total 3/4 cup)

1/2 stick butter, melted
sugar mixed with cinnamon (I never measure, but I'd guess at least a 1/2 cup sugar and a teaspoon or two of cinnamon?  just mix and add more until it looks/tastes right)
In a large bowl, sift together flour, sugar, baking powder, nutmeg, and salt. Add eggs, 2 tablespoons melted butter, and buttermilk. Mix until just combined.

Preheat the donut hole maker.  Fill and cook as directed, mine took about 5 minutes per batch.  Meanwhile, melt the remaining butter in a bowl.  In a pie plate, mix sugar and cinnamon.

As each batch comes out, coat the donuts with melted butter and then swirl around in cinnamon sugar until coated.  I put about 6 donut holes at a time in the butter bowl, then transfer to the pie plate to coat.  If you don't use butter, the cinnamon sugar just won't stick.
